Focus: How education, income, and culture shape food choices.
Highlights:

🧪 Bacterial Load in Kenkey Complements Sold on AAMUSTED Mampong Campus

Type: Laboratory-Based Food Safety Research
Focus: Microbial safety of commonly consumed student foods.
Highlights:

  • Sampled and cultured food complements served with Kenkey
  • Tested bacterial growth under lab conditions
  • Offered recommendations to enhance food hygiene practices

🏥 Public Health Internship – Saint Luke Methodist Clinic, Adjoafua

Type: Field-Based Public Health Internship
Focus: Community education and disease prevention.
Roles:

  • Participated in household health visits
  • Engaged in sanitation education and disease awareness
  • Assisted in African sleeping sickness outreach and drug distribution
